Les Affamés is the mischievous name chosen by Valentin Raguin, a native of Brissac-Quincé, for his first house in the heart of Angers, not far from the train station. Formerly at Georges rue du Mail and at Ratapoil in Paris, before Chai nous like Chai vous at Laurent Favier at La Fotte en Ré and Jemy Brouet, ex chef of Jules Verne in Paris, now in La Rochelle, returned to the Angevin region with envy , he cooks with fervor and precision often local and quality products. Here we feast on zucchini marinated in feta cheese and tarragon oil, duck tataki, carrot, ginger and hazelnuts, mackerel from Saint Gilles Croix de Vie and coleslaw salad with goat cheese and crustacean broth or even Angus beef chuck. Castile, hummus and spring vegetables that harmonize easily with the cabernet franc red “Gondwana” from Château de Fosse Sèche by Adrien and Guillaume Pire. For dessert, chocolate ganache with its nibs, coffee and slightly sweet sand will please everyone.
