Grape varieties: Grenache 70%, Syrah 30%.
Type of soil: Stony and clay-limestone for one plot; sandy and rolled pebbles for the other plot (former bed of the Rhône).
Method of vinification and aging: Harvest 100% destemmed. Short maceration, about 8 to 10 days at a controlled temperature between 23 ° C and 30 ° C, then pressing and fermentation ends in stainless steel vats. The wine rests until bottling which takes place in spring.
In the cellar: The typicality of the Syrah develops very early: Blackcurrant, Violet, and the scent of liquorice “fill the mouth” from January. The aging potential is 3 to 5 years thanks to its rich and powerful substance, but in a vintage like 2015, count 6-7 years
Bouquet: Very pleasant wine with its aromas of ripe fruit, cherries, blackcurrant and undergrowth. On the palate, very velvety with good concentration. A beautiful bottle full of roundness and charm.
Storage: Wine likes to be kept in a dark place, at constant temperature and humidity. Freshness is its ally, all the more so as the altitude. For optimal storage conditions, we advise you to keep your bottles at a maximum temperature of 16 ° C, and between 70 and 85% humidity.
To consume: For summer consumption, we recommend that you serve it after refrigerating for about 24 hours, or keep it cold and take it out 2 hours before eating it. This wine goes very well with cold meats, white meats, grilled meats, pasta, Mediterranean cuisine.
