Five recipes that maximize the power of your Instant Pot (or Multicooker)

Pressure cookers have been around for decades. Your grandma might have had one (mine just learned it!). Nowadays, Instant Pot is the brand that stands for pressure cookers, which are also referred to as multi-cookers, as they have – you guessed it – several cooking functions. Unlike the pressure cookers of yesteryear, the instant pot and many of its cousins are electric, which means they are becoming more accessible and user-friendly.

The number of websites, recipes and cookbooks dedicated to the device has exploded in recent years, making it harder to select a dish for cooking. If you are looking for a few tried-and-true recipes, here are some options from our archives that show you the full range of possibilities of a multicooker.

Black bean soup, over. Pressure cookers are ideal for making beans, ranging from dried to tender in a fraction of the time otherwise needed for soaking and cooking on the stove. This soup uses this ability. Bacon adds a spicy spine to the broth. (This recipe can also be made in a traditional pot.)

Coq au vin (chicken in red wine). Julia Child was a big fan of kitchen technology. I think she would find the adaptation of her recipe for the classic French dish cooked only 12 minutes under pressure (and the time for frying and reaching and releasing) good). Oh, we should mention that you can also light cognac for this recipe. This can also be done in a Dutch oven.

Chickpea and artichoke tagine. Here's a spicy, meatless meal that would be great on a chilly night. Just plan ahead and let the chickpeas soak for 8 to 24 hours first.

Pressure Cooker Honey Sesame Chicken. Will it be much better than that? Fast, child friendly and ready for the pantry. This recipe is easy to put together on weekdays.

Cannoli cream rice pudding. If you have not thought about using your pressure cooker to prepare a dessert, this dish could captivate you with the concept. You will enjoy the Italian-inspired reef with classic rice pudding.
