The young man is now preparing to open his own restaurant in the 14th arrondissement of Paris. Entitled “MoSuke”, the name of his restaurant was chosen with reference to his first name, but is also a ” tribute to Yasuke, who is the first and only African samurai to have existed in Japan ».
In his establishment, African cuisine will be accompanied by Japanese and French inspirations. He chose as a symbol of his restaurant a heron, his favorite animal. ” During its seasonal migrations, the bird flies between the different continents and feeds on what it finds there “, He explained. Two menus will be presented à la carte, reports Konbini. First of all, a “Migration” menu with a stick rice with okra and caviar, a baked sole in banana leaf or a beef with tamarind mafé sauce. Then a “Night flight” menu with turbot, plantains and miso prawns.
